It was harder than I thought it would be to make a meal plan without wheat, only using corn, brown rice, and potatoes, once a week each (which really translates twice, since we eat leftovers for lunch). Moderation and variety isn't hard on the taste buds, just the brain.
This, along with the large supply of ice cream already in the freezer, has put a damper on my ice cream making experiments. This coconut milk based ice cream, though, has me curious. I don't think I'd make ginger again, because as awesome as ginger ice cream is, ginger as dessert is not really a comfort food. But coconut milk based dark chocolate ice cream? That would be daring.

Kaleb loves chocolate coconut milk icecream. He is on a reduced dairy diet for health reasons and says that it tastes as good as the real stuff.

ReplyDeleteGood for you! It sounds like your diet right now is kind of a modified paleo - that *would* be tough to menu plan!
ReplyDeleteWhen I cut out dairy, wheat, and chocolate from my diet for Kekoa's reflux, I was desperate for something sweet, so I tried a store-bought coconut milk ice cream - it's amazing! I don't like coconut milk alone, but in the ice cream it was sweet and rich and delicious. Almond milk is also good - I think it would also be a good ice cream base. Rice milk ice cream has a bitter aftertaste.
Speaking of icecream experiments, I've heard avocado is pretty good.
ReplyDeleteI'm really skeptical about making avocado ice cream....mostly because guacamole is so good I'm not sure I'd give any guacamole up to make ice cream.
