They are super easy and extremely tasty. I used to make them when I was a kid when we'd have company after dinner. Now it's my go-to dessert when time is short and I don't feel like serving ice cream (which does happen from time to time)! It does take 25 minutes to cook, and probably 15 or so to prep, so you do need some time set aside to prepare it, but it's really quite manageble and makes the house smell tantalizing and hospitable for company. (I think the recipe actually came from the Eagle brand can).
Magic Cookie Bars
Ingredients:
1 stick of butter (1/2 cup of butter)
1 1/2 cups graham cracker crumbs (at least relatively fine)
1 can sweetened condensed milk
1 cup or so of coconut flakes
1 cup or so of semi sweet chocolate chips
(to make it healthier, use organic versions of things without additives or extra sugars....though I'm still looking for a "healthy" sweetened condensed milk, hah!)
Put butter in a 9x13 pan and place in the oven. Preheat oven to 375 degrees Fahrenheit. Grind Graham Cracker crumbs to a fairly fine texture with a blender or food processor (or, hammer, if you need the outlet). When the butter is completely melted (keep an eye on it, it'll melt faster than you think) remove from oven and spread the Graham cracker crumbs evenly. Pat until firm (carefully so you don't burn yourself.). Sprinkle liberally with chocolate chips, then liberally with coconut flakes, then if you desire you could add nuts. Pour sweetened condensed milk over all.
Bake for 25 minutes until golden brown.
*Magical* if served warm.

ReplyDeleteWe made these growing up too! And I've seen them other places, but this recipe is the closest one to ours. Also, we called them Magic Cookie bars and I've never heard anyone else call them that. :D Pretty cool.
